Fit and Food - 21.January

Exercising during pregnancy is extremely benefitial for the mothers health, for the baby's health, to make labor easier and to enable a natural and fast birth.
Knowing that i surfed the internet and found some youtube videos with exercise routines specially for pregnant ladies.
I have 3 routines:
- aerobic: warm up, different strenght workouts, stretching
- pilates: four different workouts, last being a stretching one
- yoga: relaxing and breathing techniques to relax mother and baby and prepare for labor

My big pregnancy-plan is to take time to eat healthy and to exercise every day.
To see how successful i am in realising that plan ill write it down day by day, hopefully.

Saturday, 21. January:

Food:
Breakfast: Toast with butter, honey and jam. Green Tea.
Lunch: Spaghetti with a sauce of pesto and cream cheese.
Dinner: Vietnamese raw springrolls:


take rice paper


Make a sauce from fish sauce, water, garlic, spring onions, carrot and a hint of sugar.


Cut salad, spring onions, cucumber, carrots and grilled beef.


Fill the rice paper, roll it into a roll, dip it in the sauce and ENJOY!

I really loved it soo much!!!


Excercise:

It seems i am really unfit at the moment which made me actually quite sad.
I did my aerobic warm up which lasts only 6 minutes and that was really hard hehehehe! So hard that after that I went directly to aerobic stretching and that was it for the day.
But before going to bed i did the Yoga excercise which is really nice and relaxing, loved it!

So that was the day, lets see how the other days will go...

Banana Ice Cream.. Yummy

This ice cream recipie is just amazing!!!
It only consists of frozen banana and i love love love it!!!

coffee-crêpe with white chocolate cream and grapefruit sauce


When i woke up from my afternoon nap i remembered the grapefruits in my fridge and that i really needed to do something with them.
so here is what i came up with:

coffee-crêpe with white chocolate cream and grapefruit sauce



and here is how to do it:

coffee-crêpe:
just do normal crêpe with egg, milk and flour and add a small but fairly strong espresso.

white chocolate cream:
put a bowl in a pot of boiling water and melt white chocolate in it: When the chocolate is entirely liquid add crème fraiche (optimal would be 1 part crème fraiche and two parts chocolate but that isn't really important).
stir until its an even cream, fill it in cups, bowls or glasses and let it cool in the fridge.

grapefruit sauce:
turn the grapefruit into filets, press the juice out of the remaining part of the grapefruit into a glass. let sugar caramelize (you can add some cinnamon). when the sugar is liquid and brown add the grapefruit juice and let it cook for some minutes to reduce and concentrate the sauce.
add the grapefruit filets, stir and let it cool in the fridge.

Try to decorate all those things nicely and youre ready to enjoy!

Klöße mit Rinderbraten und Sauerkraut

Dumplings with roast beef and sauerkraut


This recipe is my grandmothers Sunday stable, when she was a child her mother and grandmother used to prepare this meal every Sunday and as she moved out she carried on with this tradition and now passed it on to me.

Since my grandmothers comes from Silesia, a region which used to be German and belongs now to Poland, this recipe does not represent German dumplings as they are different and also differ slightly from region to region.


the stock/broth:

greens” (carrots, parsley, celery, leek)

a piece of garlic (or an onion) larded with some cloves

one star-anise (this is optional and an addition I made)

Bones preferably with some meat on it, like a piece of the leg or rips

at the end of the boiling-process I add some salt


put all these ingredients in cold water and put it on to boil for about one or more hours, the longer it boils the more intense the flavor will be.


You can add to the stock/broth whatever you feel belongs in it. I usually add whatever I have at the moment and leave out whatever I forgot to buy. Creativity is the key to success.



The meat


again, you can take whatever type of meat you prefer. My grandmother used to do that recipe with pork but since I became Muslim she changed the recipe.


When you have put the stock to boil, wash the meat and marinate it with mustard, salt and pepper. Optional you can lard it with some cloves.

Cover the meat with some foil and put it back into the refrigerator until the broth is finished.

(the broth can never cook long enough, but after about one hour it should be ready to use)


Take the meat and sear it until it gets a brown golden color, pour a bit of broth into the pan etc. to stop the frying process. Put the meat with the pan in the preheated oven at about 200° (the temperature depends also on how much time you have, for example today I have two hours, so I think 150° are enough). Pour some broth over the meat from time to time and turn the meat. Let it stew for about 1 hour or more until the meat gets soft.


Take the meat out of the sauce and cover it with some aluminum foil while u finish the sauce by thickening it with some sauce binder/thickener.


The dumplings


As soon as you have put the meat in the oven, put on water to boil for the potatoes.

The potatoes should be mealy/floury, this is very important!!!

When the potatoes are ready, peel them and smash them with a ricer. Add a a hint of nutmeg and salt as much as you like, I prefer a lot :)

now keep adding flour and work it together until you reach the correct consistence, it should not be sticky or wet and not to try. This part is rather tricky since I have no fixed amount and the amount of flour needed depends also on the consistency of the potatoes.


Form the mass into little balls and place them in water that has just began to boil. As soon as the dumplings are in the water, turn down the heat and stir slightly to make sure the dumplings don't stick to the bottom of the jar.

Turn up the heat again but make sure that the water doesn't start to boil.

The dumplings are ready when the start swimming on the surface.


The sauerkraut


Prepare it according to the instructions on the packaging. If you feel it is to sour for your taste, boil it with a little bit of water, pour the water away and add some butter. Stir and serve.

You can replace the sauerkraut with any vegetables you want, like for example red cabbage or Brussels sprouts which are both very typical for German cuisine.


It tastes amazing if you cut the cold dumplings in slices and fry them in oil and butter and serve them with the warmed up sauce and whatever is left from the meal.

So that's why I always try to prepare some extra.



Omas Rezepte


Gemüseeintopf

Verschiedene Gemüse (Suppengrün) klein schneiden und mit etwas Öl, Wasser und Salz andünsten. Inzwischen Kartoffeln kleinschneiden. Nun alles Gemüse mit einem Glas Wasser und einem Glas Brühe fertig kochen und Petersilie hinzufügen.


Bohneneintopf

Lammfleisch mit Knoechen in heißem Wasser ansetzen und kochen bis das Fleisch weich ist. Fleisch entfernen und abkühlen lassen. Kartoffeln und später Bohnen in die Brühe geben und fertig kochen. Fleisch von Knochen entfernen und ebenfalls zum Eintopf hinzugeben.


Kompott

Obst kleinschneiden, mit Wasser bedecken, Zucker nach geschmack hinzugeben und kurz aufkochen.


Hefeklöse mit Pflaumenmuß soße

Mehl in eine große Schüssel geben, Trockenhefe hinzufügen. In Milch ein Stück Butter auflösen und zum Mehl geben. Gut kneten bis alles gut vermischt ist und der Teig die gewünschte Konsistenz hat. Teig zugedeckt und bei Wärme eine Stunde gehen lassen. Teig gleichmäßig ausrollen und mit einem Glas Klöße ausstechen. Die Klöße in Wasserdampf ca. 10 minuten ziehen lassen.
Für die Soße Wasser und Milch zu gleichen Teilen warm werden lassen. Mehl in kaltem Wasser anrühren und langsam in die kochende Milch gießen. Pflaumenmuß unterrühren und mit einem Stückchen Butter abschmecken.


Kirsch-Kaltschale

Sauerkirschen aus dem Glas mit saft aufkochen und ein halbes oder ganzes Päckchen Puddingpulver (Vanille) unterrühren. Eventuell Zucker und/oder Wasser hinzufügen.


Quarkkeulchen

Quark, Mehl, Ei, eine gekochte und geriebene Kartoffel, Backpulver und Salz gut verrühren. In viel Bratfett/Öl braten und mit Apfelmuß servieren.


Semmelbrösel (zu Blumenkohl)

Viel Butter ganz heiß werden lassen, Semmelbrösel hinzugeben und gut rühren. Eine Prise Salz hinzufügen.


Rinderrouladen

Rouladen mit Senf, Salz und Pfeffer bestreichen. Saure Gurke und Zwiebel in die Roulade einrollen, zustecken und scharf anbraten. Mit Brühe ablöschen und köcheln lassen bis Rouladen weich sind. (lieber zu lange als zu kurz schmoren)

Les Huitres


Les Huitres..
Today after our coût et contrôle exam, Thi and I went to the old port to have lunch and relax a bit.. and for the first time we had huitres!!!
In the beginning we got very scared coz Thi Haos huitre was moving when she touched her!!!
So we thought she might still move in our mouth!!!

After first moments of scare it was actually pretty tasty!!!
It tastes like cucumber with salt!!!
It has a very refreshing taste but not really extraordinary and its consistency is not gellyish like I thought but more like the inside of cucumbers...

Would be a perfect thing to eat at the beach I can imagine!!!

wanna know what I did on Christmas Eve?


Yesterday was Chrismas Eve.. what does a non-christian like me does on an evening like that? Cooking for her partly-christian family!
Nice right?!


It is surprisingly easy..
Salt the goose from in- and outside and stuff it with apples and mugwort.
Then close the belly with anything suitable.


Fill a roasting tray half-full with salted water and cook the goose for half an hour on top of the oven. It is very important that the goose lays on its belly, meaning the open side is is the water.


Place the goose for half an hour at 200°C (air circulation) in the oven. The goose must be covered.


Now remove the cover and let it cook again for half an hour.


Turn the goose and continue cooking for another half hour.
You see, it taked quite some time :)


You should notice that the goose starts gaining some colour, you can turn it to enable an even bronze.. hehhe
The goose is ready when the meat is soft and you can easily stick a fork in the meat.


Take the goose out of the roasting tray. take the fat away from the remaining broth, boil it and add some sauce thickener to get the sauce.
Serve it with red cabbage and dumplings and enjoy.
